Cherry cola cupcakes, coconut macaroons and ginger snaps


I know everyone talks about the weather, but seriously, it was 18 degrees when I woke up yesterday. Sometimes I forget how bipolar Kansas/Missouri can be. A few days ago it was in the 40s and a light jacket was enough. Yesterday I was forced to tear apart my apartment to find my winter hat(s) that had been stashed away in some dark corner after I moved in summer...in temperatures in the 90s. Sigh. I guess having no seasons would be boring, right? And cold temperatures mean holiday activities, too! I saw the Messiah for the first time ever this weekend and it was fantastic. Next up? The Nutcracker ballet. I LOVE it. You know what else is good about the cold?


Husky puppies. They like the cold, right? Meet Lois, my friends Joe and Brianne's new puppy. Isn't she SO DAMN CUTE?! Yeah, I got to look at that cute little face last weekend. I felt lucky.


I think we've probably established how much I HATE coconut. Can't really explain it, just don't like the stuff. So the only time it appears on this blog is when it's for someone besides me who will be eating it (see Kelly's birthday or special requests). These basic coconut macaroons were neither. You see, my computer at work almost crashed last week. As in, left for a few more days, I think it would have been totally gone rather than freezing every couple of hours. And my friend, Brad, happens to be the guy who sets up the computers at work. And my new computer happened to take a really, really long time to set up. And he happens to like coconut. And I happened to have a lot of coconut in my cabinet. So I made coconut macaroons. I did not sample them, so I cannot tell you if they were good or bad. They look pretty though!


Currently playing on my TV is a DVRed episode of "Good Eats." I can honestly say I'd never really watched it before seeing Alton Brown in person recently, but I'm pretty fascinated by what he's already taught me (i.e. don't put avocados you're wanting to ripen in the fridge because it will stop the process). Part of seeing him live was getting his latest cookbook, "Good Eats 3: The Later Years."Aunt Betty loves ginger, so we decided to make his candied ginger recipe (which will definitely clear out your sinuses) and then put some in these ginger snaps. The candied ginger came out perfectly. These cookies, not so much. Lesson learned: when weights are given, use an accurate kitchen scale to get the right amount. I'm putting one on my Christmas list. This picture is the edited recipe. Our first batch was....rather flat and thin. But the edited versions were incredibly good and packed a triple ginger punch: ground, candied and fresh.


And really, these cupcakes have no holiday theme whatsoever. I just had an itch to make cherry cola cupcakes again after making them in May. It's a recipe from Cupcake Project and is kind of baffling because it's super runny. It also takes cola extract, which isn't around at regular grocery stores (I got mine at Sweet! Baking and Candy-Making Supply). They're cola-flavored cakes with maraschino cherries in them, a cola-flavored cream cheese icing and the nice little cherry on top. They were a hit at work. C is for...Canada? Cherry limeade cupcakes, citrus cake pops and cookies


My stepsister Katie visited last weekend. Well, technically she visited all last week, but she stopped in KC on Sunday. It was fun to introduce her to my new city, and just see her in general. She lives in Ottawa, Ontario, which is pretty darn far away (and plane tickets are expensive!). Technically, I'm an only child. But when my dad remarried almost a decade ago, I inherited a step-sister and step-brother, Katie and Justin. Even though I hadn't seen Katie in more than a year, we had a great time that day, going to City Market and shopping for as long as we could stand what my phone told me felt like 111 degrees that day. Stupid Kansas. We also lounged around and watched wedding reality TV shoes. So even though she came into my life around my teenage years, it's pretty darn cool to have an older sister!


Katie requested a baked good for her visit, and Dad chimed in that he thought I should make cake pops (I think he just wanted me to make those so she could take some home to him!). With these, I tried something new: citrus flavors. I've only made basic flavors so far for cake pops, like yellow cake, chocolate and red velvet. For these, I did lemon cake with a frosting to which I added lemon and lime juices. Being a citrus fanatic myself, I loved them. Katie liked them too, and I heard reports from out West that Dad and Cathie enjoyed them. Mission accomplished!


So this picture kind of cheats. I actually made cookies twice, and this is a combo of both recipes. First (the smaller cookies) were my favorite all-brown sugar chocolate chip cookies. I actually found these really great semi-sweet and white chocolate swirl chips, which made for a great twist on the cookies. The other cookies were my favorite peanut butter cookies from Smitten Kitchen. Always a winner and always nice, soft cookies.


I've been making fewer cupcakes than normal. It may not seem that way on here, but Kelly's cupcakes I made weeks ago and hadn't gotten around to posting them. We've had crazy hot temperatures in Kansas lately, but it finally started cooling off lately. Cherry limeades are one of my favorite summer drinks...or anytime drinks. I made these last summer, but lemme tell you, this year's cherry limeade cupcakes were WAY better. If I remember correctly, I used grenadine in the frosting last year. This year, it was maraschino cherry-flavored. With the lime syrup brushed over the already lime-flavored cupcakes, they're flavor-packed. Someone at work even said they were the best treat yet. Success!

Soda cupcake trio and some very big news!


I know it's been a little bit of radio silence over here this week, but I promise, I have a darn good reason. I've had a busy couple of weeks...covered a Royal Wedding watch party, went to Salina with our photographer, Richard, to cover a Lawrence student going to military school — actually, that one has turned out to be my favorite story I've written at the LJ. But actually, the biggest news has to deal with the LJ: this Friday is my last day there. I've accepted a position at the Kansas City Business Journal, where I will be a reporter and copy editor, dealing with the web primarily. I'm pretty excited, but it's also my first move between jobs. So hopefully it goes well!


Part of my farewell this week will be a fair amount of baking. I'm actually really sad about about leaving my coworkers; they're great people. I think that's the hardest part of leaving, actually. It'd probably be easier if I hated them, but I don't. So because this is my last week working with them, I want to treat them to some Brenna sweets before I go. For today's cupcakes, I went with a soda theme. Option 1: cherry Coke cupcakes. They have a cola-flavored cake with four maraschino cherries baked in, then a cream cheese cola icing. I don't even really like straight cola flavor, but I liked these.


Option 2: Creamsicle cupcakes. Okay, so that's an ice cream treat sort of, but I've had an orange creme soda before too. I used this orange cake recipe, then sort of made my own frosting up. It's my basic vanilla frosting with marshmallow fluff mixed in. On top I made a candy melt topper that tastes like orange.


My last option is root beer cupcakes, which I've made once before. They're made with root beer extract, which is the weirdest thing. I actually found it at Walmart, of all places. I made my basic vanilla frosting and added some of that.

So, starting late next week, I have a new staff to bake for. I'm excited but nervous as well. Guess we'll see how it goes! P.S.: posted these over at Hoosier Homemade's Cupcake Tuesday!

Sour Patch Kids cupcakes


First they're sour, then they're sweet! First disclaimer: I know I don't usually write about just one dessert. But this one, I just had to. So Kelly and I have a favorite candy: Sour Patch Kids. Kelly will buy me a box of them any time I'm really down (she's a great best friend!). A bag of Sour Patch Kids has even mysteriously appeared in the background of one of my roommate's videos about Big 12 sports. So needless to say, the candy is a favorite.


So a while ago Kelly and I started talking about making Sour Patch Kids cupcakes. Like, six months ago. But I figured if we were going to make these cupcakes, we'd have to make them right.


So I got cupcake wrappers to match the four flavors.


Coloring to match the colors.


Flavoring to match each flavor (cherry, orange, lemon and lime). And the kicker, which was tart and sour flavor enhancer. (Edit: Looks like my original source for this is out, so here are a couple other places to find it: LorAnn, Baker's Nook, Sears and Amazon.) Add it into a swiss meringue buttercream.


A basic yellow cupcake and a Sour Patch Kid on top.


In the process, obliterate the kitchen. Many times over.


So in the end, you get a complete cupcake with a sour-sweet frosting in a specific flavor. Completely successful. I will make them again...but not for a while.

Edit: Since posting this, I've had requests for amounts and how to make them. I tend to experiment a lot, but here's the amounts. I wanted a massive amount of cupcakes to share with people at work and for Kelly to take home. I made 1 1/2 recipes of the yellow cake. Be careful not to fill the liners very far, because this recipe rises a LOT. 2/3 full will do it, and better to go a bit lower even. This gave me 48 (!) cupcakes. One batch generally makes 30, give or take a few.

Then I made two batches of this swiss meringue buttercream (not at the same time though, just when I was ready for them. I split the recipe in half for each flavor. I put in a bit of color and flavoring, then about a quarter bottle of the tart flavoring. That seems like a lot, but it took that much to really give it the punch of Sour Patch Kids. Then I added coloring and fruit flavoring to taste. So for two batches split in half, you'll get all four frostings. The amounts were almost perfect for 12 cupcakes each. Enjoy!

Daring Bakers' challenge: Crostata


The 2010 November Daring Bakers’ challenge was hosted by Simona of briciole. She chose to challenge Daring Bakers’ to make pasta frolla for a crostata. She used her own experience as a source, as well as information from Pellegrino Artusi’s Science in the Kitchen and the Art of Eating Well.

Okay, I won't lie, I don't really get crostata. Not that it's hard, but what makes it different from a normal pie or tart. Apparently it's Italian, especially the pasta frolla, which is the crust. It's pretty simple, so that was nice. Just throw some ingredients in the food processor, knead it a bit and you're done. You're supposed to make it in a tart pan, but I don't have one, so I used a pie pan.


Aunt Betty and I made this earlier this month, the same time as the pecan pie cupcakes and buckeyes. We didn't have a solid plan for a filling, but she had some cherry preserves she'd made earlier in September from their cherry trees out back. It turned out to be the perfect filling! Some of the other bakers did some crazier fillings, like a roasted beetroot and chilli chocolate crostata with a charred carrot lattice, or some savory options. I don't think I'm that adventurous with desserts.

But now it's time to start thinking of Christmas-themed desserts. I'm hoping the December challenge will fit that role. I definitely have to make pizzelles, something I make every year. My Aunt Mary K's mom Mildred makes them every year, and I miss them so much I've started making them. I might even transform them into a Christmas cannoli. On top of that, I'm starting Christmas decorating and movie-watching. Count for "White Christmas" (my Christmas movie of choice): 3. And it's not even December!

In anticipation of family, friends and Shark Attacks


Have I talked before about how much I love Disney movies? And how I'm essentially a 5-year-old in a 23-year-old's body? Well, maybe not quite. But there's something charming and reassuring about Disney movies, especially after a hard day, or week, or whatever. I've been really down lately, for various reasons. I didn't bake for almost a week last week, which has to be a record. Luckily, I've had friends visit from far out of town lately, so that helped a bit. But I got home from work last night, and just felt like Disney. I put in Wall-E, one I haven't seen in a while. I forgot how charming this movie is. Wall-E hums along to "Put on Your Sunday Clothes" from "Hello, Dolly!" The song "La Vie en Rose" plays while he's cleaning up Earth — a song that is prominent in one of my all-time favorite movies, "Sabrina," with Audrey Hepburn (who is just classic and wonderful in every way too, and my love for her is illustrated by her movie posters in my room). Even "Don't Worry, Be Happy," plays in Wall-E's home. It's a little hard to be frustrated when such wonderful songs play during a cartoon movie about the demise of the world. Seriously. Now, I just have to make it a few more days of work, and it's off to some wonderful time with my grandma. I honestly cannot wait.


Well, anyway, last weekend, two of my very best friends from college came into town on the weekend of the KU-Colorado football game. I worked with Erin and Jodi my freshman and sophomore years at our college newspaper, and they were honestly two of the most fun people on staff. They were both older and graduated and moved states away, but they came back for the weekend (Erin is on my left and Jodi is on my right). It was so wonderful to have them back, especially for a game where we scored 35 points in the fourth quarter! That's some of the most entertaining I've seen in person for a while.


A tradition of ours was going to The Sandbar, my favorite local bar. The Sandbar's signature drink is something called a Shark Attack, a sort of blue tropical concoction that comes with a shark filled with grenadine that you pour into the glass and it looks like blood. Well, it's been an idea I've had for a while, but I decided to make shark attack cupcakes. I made a lemon cupcake recipe I like, mixing in a bit of curacao. I also tried to reduce down some, but let it go for too long. Know what happens when you cook it for too long? It turns hard, sort of candy-ish. And it burns when you touch it. Ask me how I know... Anyway, when they were done, I poked holes in the cupcakes with skewers and brushed more curacao over the top. Then, for the icing, I had to get some grenadine in, so I made swiss meringue buttercream and mixed greadine in (last time I made grenadine frosting it was for cherry limeade cupcakes with my normal buttercream, and it was WAY too heavy). Put a shark from Bake it Pretty on top, and it's done! My friends loved them, and so did the people at the bar, who I took them to. Debbi, who writes the blog for the bar, wrote about the cupcakes, twice! Makes me happy :)


Later that week, I needed some quality Aunt Betty time. While there, we made pecan pie cupcakes, my Daring Bakers submission for this month and buckeyes. Now, I'd never heard of buckeyes before they showed up in my blog roll from Smitten Kitchen. Being a peanut butter-lover, I HAD to try them. Apparently these are popular in Ohio, you know, the buckeyes being Ohio State's mascot and all. And a friend at work from Michigan knew what they were too. They were super easy and super tasty, although a bit rich. Not bad when you have just one (or five) though.


Then a few days ago I ran across this recipe for chocolate cookies with M&Ms. Sometimes, I just prefer a simple recipe like this. For these, my friend Liz was in town from Dallas (we didn't take any pictures, boo). It was great to see her, because I hadn't since we graduated. She and Kelly and I saw Morning Glory (a must-see for any journalism geek like myself), went shopping, and later we went out. Good times. Anyway, these cookies were great, and very brownie-like. We had to stop at the store to get M&Ms, and I asked if it was too early to use Christmas M&Ms. Some dude laughed at me...and I bought them anyway. So I'm guilty of early use of Christmas candy, whatever.

So, like I said, only a few days until my grandma's party. Actually, tomorrow is her actual birthday. And then I will have a movie marathon with family. I can't wait. It's been far too long.

Two pops + two cupcakes = three desserts


I'm in the middle of a three-day weekend, which was definitely needed. The good news is I can finally drive myself places, so that's nice. It's the weekend of seeing people I haven't seen in forever. I had lunch with my friend Anne yesterday, who has been busy with school for a while. Friends are in town from Colorado, who we haven't seen in months. And then my aunt comes through town on her way up to see my mom. It's nice to see everyone, because it's been sort of strange finishing school. I'm sure this is how everyone who stays in their college town feels. Everyone I spent a lot of time with has moved away, save a few who I'm very grateful are still around. I know it's just a part of growing up, and now it's time to make new friends and try hard to stay in touch with old ones. But it's still strange. So here's to keeping in touch with people. I definitely intend to.


I went for a second go at cake pops this week. They are easily one of the most fun desserts to eat. I mean, come on, who doesn't love cake+frosting+candy+sprinkles in a bite-sized dessert? I have an ultimate football season goal though. I want to take these Sesame Street Big Bird cake pops by Bakerella and edit them into Jayhawks for tailgating. Doable? I have no idea. But I'm going to try. First, though, I had to make manageable plain pops, so that was my goal this time. I'm getting better at dipping them, which definitely takes a technique. I made these smaller than my last ones, which were larger than bite-size and incredibly hard to manage. I'm definitely getting better. We'll see if I get to Jayhawk-level, though.


I took a little break from baking through the beginning of the week, mostly because I was pretty much sleeping any time I wasn't at work. But then I decided to make another cereal-style cupcake. This time? Honeycomb. I didn't eat it regularly as a kid, but I got it the other day at the store, and it's soooo tasty! I thought it would be great to try. I made a honey cupcake featured in Martha's Cupcake book (which I got spiral bound this week...best decision EVER). Then some cream cheese icing on top, flavored with a tiny bit of honey, and one honeycomb on top. The cakes were REALLY honey-y, so I'm glad I didn't use honey buttercream on top too. I brought them to work on election night, which is apparently a night full of treats. It was fun though, and strange to walk into a newsroom full of people. It will be interesting when it's not the primaries anymore and the real deal.


A couple nights ago Drew and I went to four different grocery stores to find ingredients for these cupcakes I saw on the Confessions of a Cookbook Queen blog: bomb pop cupcakes. How great an idea is that? Definitely perfect for these 100-degree days. Anyway, the recipe called for cherry and raspberry extracts, which were not easy to find. A trip to Target, Wal-Mart (they have a surprisingly large supply of extracts), Dillons and Hy-Vee later, I had my ingredients and was ready to go. I used my favorite lemon cupcake recipe, edited with a little lime juice and lime zest like the bomb pop recipe said to do. When they're done, the recipe said to pour a mix of raspberry Jello powder and boiling water over the top, so you end up with a sort of lemon-lime-raspberry cupcakes. Then, for the frosting, you do three different flavors, just like normal Bomb Pops. The blue was raspberry, the white was lime (flavored with lime juice) and the red was cherry. A popsicle stick on top and they're done!

I made these cupcakes for Matt and Sarah getting here from Colorado. They were good friends on the Kansan and we don't see them hardly ever. Today, Sarah and I are getting pedicures — it's my first one! I can't wait. And then, I go from being a super girly girl to not...as in, I'm covering the demolition derby. I cannot even articulate how excited I am about this! The demo derby is one of my favorite things to go to during the summer. You skip the whole racing cars part and just see the crashes. I'm going to put a new spin on the story, I hope. We'll see how it turns out!

Drinks in desserts: pink lemonade pie and cherry limeade cupcakes


Today is my day off. So far I've caught up on sleep and gotten a haircut. Pretty active day, eh? Oh well, that's what weekends (since this is mine) are all about.

It's been fairly active in Lawrence lately. We had a monster of a storm yesterday; it was raining so hard you couldn't see more than three feet out the window. Parts of Lawrence flooded, I-70 was closed and KC got hit really hard too. Just another Kansas summer. I guess it's not boring, though.


It's been a week since I got back from my trip out to Lewis, which is always a good time, but also kind of sad. I love going on the road trip with just my dad and grandma, because we don't do stuff limited to just family very often. But it's also filled with sad memories — death of my maternal grandfather, death of my cousin's little girl, death of my dad's brother when my dad was 11. I mean, I guess that's how life goes, but it's so sad to think about all that in one day. After we plant flowers, we always do a mini-tour of the area around Lewis of places back in my grandma's and dad's life, the first being a farmhouse that was the first place my dad lived. He went inside it and it was abandoned, run-down, smelled bad, everything. It's weird to think that if I went inside the house my dad built for me to grow up in I'd probably be really apprehensive too. It's not abandoned, but it's been completely changed. Anyway, point is, the trip is always very sad, but happy too. I still have my grandma to go with, and that's definitely always an experience. Plus, every time I go I learn more about her life. We went through her cedar chest and found both her wedding gown and a plaque from her college sorority days...in 1941. Those letters in the picture are ones my grandpa wrote her before they were married and he was stationed at various army bases, dated 1940-1942. Incredible.


The weekend after coming home from that, I really wanted an easy dessert to make. I was browsing the LJWorld sites and found a food blog they have called the Flying Fork. Somehow I stumbled upon a pink lemonade pie that looked really yummy and easy. Originally I wanted to make pink lemonade cheesecake, but the recipes all called for chilling overnight, and I didn't really want to wait. So I ended up with an easy pink lemonade pie — four ingredients! Okay, so it wasn't technically as much baking as it was chilling, but it was dessert and tasted really yummy. That night AC came to town, and we all went to see the A-Team, which I actually liked. I know critics hated it, but for a movie about a show that was already really ridiculous, they did a good job. The casting didn't bother me either, and I thought it would. Murdock is still my favorite :)

Saturday I worked dayside at the newspaper, and I got the best assignment ever. I got to cover the cat show! I know that sounds horrible to some people, but I have no issue spending part of the day with kitty cats. One Maine Coon was the biggest I'd ever seen; he was longer than the torso of the guy carrying him. There were definitely some characters there, including one guy whose Maine Coons were named things like Francoonstein and Coonzilla. Creativity, yes! So I went to the show and then wrote the story for the paper and put together an audio slideshow. It was a fun day at work.


If you couldn't tell, I've been on a cupcake kick lately, and that continued after my cat extravaganza. I made cherry limeade cupcakes to take into the newsroom. Man, those cupcakes are lime-y. The recipe uses limeade concentrate out of the freezer — the whole can! They'd be really tasty as just lime-flavored cupcakes too. Then on the frosting I departed from her recipe and kind of just made my own grenadine frosting. All in all, I thought they were pretty good, but I'd kick up the cherry flavor a bit next time.

A couple days ago I made brownies just for fun. No picture of those, though. They were eaten before I could shoot a pic.

Now it's time for me to head to the gym to counteract all this baking. I joined Body Boutique this week, so now I just have to make sure I actually go on a regular basis. I guess the nice thing about working in a newsroom (among many other things) is that when I bake, there are always a bunch of people willing to eat the desserts. Plus, cupcakes always brighten my day, so I hope they brighten other people's as well.
