Happy 2012: NYE & birthday margarita cupcakes, chocolate chip cookies and baguettes


A professor from my journalism school posted a link on Twitter the other day that was really thought-provoking. It was a blog post about questions to ask for yourself about the last year. Yes, perhaps it is something that's written in some form or another every year, but honestly, it made me realize what a wonderful year I've had. The most amazing thing I did in 2011? Get a new job and move to a new city. Am I happy about where I am in life? Completely. I have some amazing friends, many of whom I got to see during the holidays even though they live far, far away. I got to make plans to visit them in 2012. I got to see both of my stepsiblings for Christmas, even though they live in Canada. And as a whole, I'm really happy where I am emotionally and mentally. So 2012, bring it on. Let's make it even better. /end typical year-beginning/year-end post.


I'm not the type of person to really go for the whole big New Year's Eve out sort of thing. But one of my best friends, Tara, has her birthday on NYE, so I celebrated at her house with her family. That included bringing my customary bday gift of cupcakes, which this time was a margarita cupcake. And despite not being kid-friendly for all the little ones running around, I'd say these were definitely a hit. They're basically a lime cake brushed with tequila and then topped with a lime-tequila icing. Pretty good alcoholic treat for NYE!


I've been a little low on energy since the holidays ending. I was busy with family and friends for basically two weeks straight, so my baking was relatively basic, including these brown sugar chocolate chip cookies. Simple, yet always a hit. They always seem to disappear rather quickly at work.


Among the kitchen items I asked for for Christmas (how great is an immersion blender, seriously? Or is that just me being a dork?), I found something awesome on a sort of scavenger hunt Cathie sponsored. She loves to thrift, so on Christmas Eve, she gave each of us kids a $5 and told us to thrift and find something awesome. One of my finds? A baguette pan for $2.75. Not too shabby, especially for something I assume was given to the thrift store because whoever donated had no idea what it was. So on a recent trip to Aunt Betty's, we made a couple baguettes from one of her old bread cookbooks that came out perfectly, even with those little dots on the bottom, which are from the perforations on the pan. What a great find!

Summer sweets: margarita cupcakes, oatmeal scotchies and chocolate coconut no-bakes


Wedding season has started! I've got three this summer, and already another for next year. Each one this year is someone my age getting hitched, which makes me feel strangely old, even though I'm only 23.


About a week ago, my friend Haley (Jones) Williams got married. We lived in the same dorm freshman year, took classes together and went through the journalism school together, ending up at the Kansan. Her wedding was so Haley, as my friend Lauren and I put it. Haley looked unbelievable in her dress, and she walked down to a song from "Pride and Prejudice," which I LOVED. Her main color was pale yellow, which was the theme in the candy bar on the right. The cake was simple and perfect. Such a lovely day.


What is not lovely (in my mind) is this cookie, for one reason and one reason only: coconut. I HATE coconut. It is one of my least favorite foods. However, if someone requests something specific, I will usually make it. Even if it's like this no-bake chocolate coconut cookie...which burnt my finger. Apparently these were pretty good...I wouldn't know, because I didn't try them.


So, to offset my dislike of coconut, I made these oatmeal scotchies to take to work as well. I've had issues with them in the past, becoming too crunchy and thin. So I added slightly more oats and slightly more flour, and they turned out perfectly. Except for, you know, that tray I overbaked to a crisp. The others were excellent though :)


Last weekend was a yearly party a photographer at the LJ throws every year, and that photog, Richard, loves tequila. So I had to make margarita cupcakes for his party. I made a couple of edits to this recipe: 1) I subbed a tablespoon of tequila for lime juice in the cupcake batter, 2) brushed a lot more than a tablespoon of tequila over the tops, 3) added quite a bit more powdered sugar to the icing to make it pipeable and 4) topped it with coarse salt. Lemme tell you, they tasted a lot like margaritas, and they were a hit at the party. They were gone pretty darn quick, and I had a few people ask for the recipe. I will put those on my to-make-again list (and they're going on Hoosier Homemade's Cupcake Tuesday and Tasty Tuesdays)!

Cupcake fever

Now that I've started working nights, I have daytime free during the week. I used to intern on Monday and Wednesday afternoons, and now I have all that time. On Monday, I used it to take a three-hour nap (I've also found that my sleep schedule is officially screwed up). It's nice to be home in the afternoon though and have that block of time for homework, sleep or whatever, especially with the gorgeous weather we've started having!

My sleep schedule is totally screwed up now, though. Basically I'll be awake during the day for four days per week and awake at nights for three, but I've discovered that it's making me sleep considerably more. Like yesterday, when I was going to do a whole lot of homework. I got seven hours of sleep at night, went to class, and then came home to take a quick nap...which turned into another three-hour nap. Throughout the day I took like three more naps, something I've never needed to do. Maybe my body is catching up on the last four years when I've repeatedly deprived myself of sleep. Or something like that.

In between homework and naps, I've been baking cupcakes. Sometimes I get on cupcake kicks; right now I really like making tasty icing for them. I made cupcakes twice so far this week, and just keep adding to the kinds I want to make. I've been making half recipes in case they aren't tasty, but so far, they've been successful.

First, I made margarita cupcakes. You might remember that I made margarita cheesecake once, but I thought that I'd take a shot at the cupcake category. I looked all over the Interwebs for a recipe, and found basically two options: one using cake mix and one that was vegan. Since starting baking, I've almost completely stopped using cake mix. If I can make it from scratch, why not? So that option was out. So I went with the vegan recipe, from Baking Bites, which uses soy milk and all that. Then I started making the icing recipe on that site — and didn't like it. So instead I made basic buttercream and added lime juice and tequila. Altogether, these were super tasty! I put a lime gummy on top, and the tequila added a little bite. My only complaint was that they stuck to the cupcake liners pretty badly, which probably has something to do with the vegan part. Or, I just screwed up. Either is totally possible. Point is, they were yummy.

Next I went with the classics — rice krispie treats, Easter-style. I'm not big into Easter, although Cadbury creme eggs are wonderful. But I'd been craving rice krispie treats for a while, so I decided to make eggs, which I'd seen on a commercial. Yes, product placement does work with me sometimes. It had been a long time since I'd made them, so it was rather nostalgic. I made the treats, then Drew measured them out into 1/4 cup portions and I shaped them into egg shapes. I had to butter my hands to do it. SO gross. Then dip them in a chocolate/shortening mixture (which wasn't as thick as I would have liked) and roll in sprinkles. It was a pretty easy springtime dessert. And newsroom folk liked it too.

So then I made cupcakes again. I got this book, 500 Cupcakes, a couple weeks ago. The book has base recipes and then three or so variations for each one, so I'm assuming that adds up to 500 recipes. Pretty pictures too, and a pictures-of-what-I'm-making-in-my-cookbook kind of girl. So there was a recipe in there for cookies and cream cupcakes. The batter was cookie-like in consistency, so I was a little worried about how they'd turn out, but they ended up being just a denser cupcake, which makes sense I guess. Basically it's a white cupcake with Oreo pieces mixed in. For the icing, they had a buttercream that you sprinkled chopped Oreos on top of, but I wanted it to be more cookies and cream-y. So I put some Oreos in the food processor and took them down to crumb size and mixed it into the icing. It was so tasty — kind of like what an icing version of cookies and cream ice cream would be. It was great flavor too. Put half an Oreo on top, and then I was done! I'll definitely be making those again.

I have one more cupcake I'd like to make before Easter, the Cadbury eggs cupcakes from the blog Culinary Concoctions by Peabody. Those eggs aren't cheap though, so I'll have to think about it.

There are a lot of people coming into town this weekend, but I'm not sure I'll get to see them all. Mark will be here, and Mary from NYC, and Drew's brother. I'm super excited to see Mary, who I haven't seen in a few months (which is a loooong time considering we used to spend every waking hour together in the newsroom). Not sure I'll get to see the other two, because I start my job on my own tonight! Well, I did a shift by myself Sunday, but not overnight. We'll see how it goes. Fingers crossed!

Now I'm off to study for my impending computer science test. Ugh.

Two weeks of baking

I know, it's been a while since I've posted. I'm going on a month of being sick...except it's not the same sickness. It's morphed like 3 times now, resurging last night when I remembered how I used to sleep with a humidifier. I definitely needed one last night.

I've been doing a fair amount of baking lately and have found some really great recipes, and some that are really flawed too.

I felt like venturing into making cheesecake last weekend, but didn't want a plain recipe. It was Martha to the rescue, though, with a margarita cheesecake recipe. I don't think I've made a cheesecake in the last 10 years, but I used to bake them with my mom. I was a little rusty, so I followed the recipe to a T. The pretzel crust was especially intriguing, and the water bath was confusing to me. It didn't make sense to me that a springform pan, which isn't all one piece, wouldn't leak when put in a pan of water. Well, I was right, and Martha was wrong. So after making a whole cheesecake, I made another. I edited the crust recipe (if you ever make this, use WAY more butter; I put in a whole stick, twice what she said). I also didn't use a water bath, which made it brown uneven and crack. So I improvised and made a lime sour cream topping, and voila! My first cheesecake in a while. Drew, Stephen and Bryan approved, and we ate it along with Canada geese (it actually tasted like steak) while watching/ignoring the KU-Texas football game.

Then came the loaf of bread. The last time I made/attempted bread, it was super dense. Kneading is confusing to me, because the dough always seemed to be sticky. So I went to Aunt Betty's house to make bread. We made everything and just hung out while letting the dough rise. I've been so busy with classes lately I haven't seen her in a while, but the end product was excellent. She lent me her pasta maker too, so that's my next project.

Thanksgiving meant some excellent desserts as well. Holidays tend to be hard for me, considering I don't exactly have a cohesive family any more. I went to Drew's house on Thanksgiving for the second year in a row, which means entering into a family with three boys (one was away), both parents, grandparents, four cousins and an aunt and uncle. It's a huge departure from any of my family, one side of which is seven people total including myself, the other of which never gets together in a large group. It's a great family, and I love being around them, but it's still a little weird. Sometimes I wish I could fast forward to a time when I have my own family and my own traditions that can't be dictated by others and I don't feel guilty about. There were some pretty great desserts though. Cream pie, apple pie, pumpkin pie, and even during dinner carrot souffle. Sounds gross, but it was great.

Last night was my most recent baking episode with chocolate chip M&M cookies. Pretty simple, but Taylor requested them.

Not sure what I plan on baking next. I saw a recipe for egg nog cookies, and boy do I love my egg nog. I have no idea when I'll be able to make them though. Two weeks left of school, and they're both completely booked!
